What is a Podcast?
The content of a podcast is either an audio or video file. Sometimes podcasts are music. More often they are talk. They might be a single person, two people have a conversation, a group conversation, a call-in show. Really any format you've heard on the radio might be employed in a podcast. The same thing is true with video podcasts. Most often they are primarily videos of people talking. However, they can technically be in any format that you might see on TV or elsewhere.
What makes an audio or video file into a podcast is that the media's producer makes the file available as part of a series that can be downloaded from the Internet. Listeners can then subscribe to this series and have new editions of the series automatically downloaded to their computer or iPod. I describe the technical process of how this works here in my entry on RSS (Really Simple Syndication). Below, however, I offer a short video that explains how you can find and subscribe to an audio or video podcast in iTunes.

How to Record a Podcast and Upload It to iTunesU
The first video offers instructions on using the Garage Band application (on a Mac) to record an audio podcast. The second video shows you how to upload your file to iTunesU in order to share it with the class. I made these videos about a year ago, so the interfaces you see might be slightly different, but I think these will show you what you need to do in technical terms. Let me know if you have questions.
